I love this salad because the sweetness of the berries and honey mixed with the tartness of lemon and dijon mustard results in a mouthwatering flavor that is both refreshing and complex. It also comes packed with a plethora of health benefits.


The star ingredients of this salad, the mixed berries, and microgreens, are renowned for their anti-angiogenic properties. Mixed Berry and Microgreens Salad with Honey Dressing

What you need: 


  • Mixed berries (blueberries, raspberries, strawberries)

  • Microgreens (any will do, but my favorite is micro arugula)

  • Honey

  • Dijon Mustard

  • Olive Oil

  • Lemon

  • Salt and Pepper


Ingredients


  • 2 cups of mixed berries (blueberries, raspberries, strawberries)

  • 2 cups of microgreens of your choice

  • 2 tablespoons of honey

  • 1 teaspoon of Dijon mustard

  • 4 tablespoons of olive oil

  • Juice of 1 lemon

  • Salt and pepper to taste


Assembling the Salad


Preparing this salad is as easy as it gets!


  1. Start by washing the mixed berries and microgreens thoroughly. Once that's done, arrange them in a salad bowl.

  2. In a separate bowl, whisk together the honey, Dijon mustard, olive oil, and lemon juice. Add salt and pepper to taste.

  3. Pour this dressing over the mixed berries and microgreens, then gently toss everything together to ensure the salad is evenly coated with the dressing.
